Ingredients

1 tbsp butter or margarine
1 tsp salt
2 cups all-purpose flour
200 g ham, sliced and diced
300 g mussarela cheese, sliced and diced
2 eggs, lightly beaten (for breading)
Breadcrumbs (for breading)
Vegetable oil (for deep frying)
1 tbsp butter or margarine
1 tsp salt
2 cups all-purpose flour
200 g ham, sliced and diced
300 g mussarela cheese, sliced and diced
2 eggs, lightly beaten (for breading)
Breadcrumbs (for breading)
Vegetable oil (for deep frying)
Where to find ingredients
Find fresh milk, butter, eggs, and ham at local supermarkets or butchers. Use a standard all-purpose flour available in the baking aisle. For authentic results, source quality mussarela cheese from the deli counter; if unavailable, a mild, meltable cow's milk cheese is a suitable substitute.
Preparation method
- Bring the milk, butter, and salt to a boil in a medium pot.
- Once the liquid is bubbling, add the flour all at once.
- Stir vigorously with a sturdy spoon until a smooth, uniform ball of dough forms.
- Continue to cook the dough over low heat, kneading it against the sides of the pot until it pulls away cleanly from the bottom.
- Turn the dough out onto a clean, flat surface and knead thoroughly while it is still warm.
- Roll the dough out thin using your hands or a rolling pin.
- Use the rim of a glass or a round cutter to stamp out circles in the dough.
- Place a spoonful of the diced ham and mussarela mixture into the center of half of the dough rounds.
- Top with the remaining dough rounds and press the edges firmly to seal the risoles.
- Dip each risole into the beaten eggs and then dredge thoroughly in the breadcrumbs until completely coated.
- Heat plenty of oil in a deep skillet and fry the risoles until they are golden brown on both sides.
- Remove the fried snacks with a slotted spoon and drain on paper towels to remove excess oil.
