4 eggs
1 tin table cream (without the whey)
100 ml coconut milk (half a tin)
2 cups all-purpose flour
2 cups cornmeal (fubá)
1 tablespoon baking powder
100 ml coconut milk (for the glaze)
2 cups sugar (for the glaze)
2 cups sugar
4 eggs
1 tin table cream (without the whey)
100 ml coconut milk (half a tin)
2 cups all-purpose flour
2 cups cornmeal (fubá)
1 tablespoon baking powder
100 ml coconut milk (for the glaze)
2 cups sugar (for the glaze)
Where to find ingredients
Cornmeal (fubá) is a fine yellow corn flour found in the baking or flour aisle of supermarkets, or in local Caribbean or Latin grocery shops. Table cream is found in the canned milk or international section. Look for pure coconut milk in the international aisle; avoid sweetened coconut cream unless specified. All-purpose flour and other standard baking essentials are available at any local grocery store or supermarket.
Preparation method
- Whip the egg whites until they form stiff peaks
- Add the sugar to the egg whites and continue whipping until combined
- Fold in the margarine, egg yolks, table cream, the first 100 ml of coconut milk, flour, and cornmeal
- Mix everything together until you have a smooth, well-combined batter
- Add the baking powder last and gently fold it into the batter
- Pour the batter into a greased baking tin
- Bake in a preheated oven at medium heat until the cake is golden brown and fully set
- Let the cake cool down slightly after taking it out of the oven
- Whisk the remaining 100 ml of coconut milk with the 2 cups of sugar to make the glaze
- Pour this creamy mixture evenly over the cake
Observations
This cornmeal cake is a staple for afternoon tea or coffee. Adding cream to the batter creates a incredibly soft, moist texture that pairs perfectly with the sweet coconut glaze.
