Where to find ingredients
Find firm, ripe tomatoes at your local market or supermarket produce section. Coarse salt, also known as sea salt or kosher salt, is easily found in the spice aisle of any grocery shop. Extra virgin olive oil and fresh black peppercorns are standard staples at any local market. For the fresh basil, check the produce aisle or your local greengrocer; if you can't find it fresh, look for it in the herb section or consider picking up a small potted plant from a local nursery to keep on your kitchen windowsill.
Preparation method
- Wash the tomatoes well and dry them thoroughly
- Slice off the tops of each tomato
- Place the tomatoes cut-side down on your cutting board
- Cut crosswise and then in an X pattern to get 8 uniform wedges
- Place the tomato pieces into a sieve or colander set over a bowl
- Sprinkle the coarse salt over the tomatoes and toss gently so everything is well-coated
- Cover the bowl with plastic wrap or a plate
- Keep in the fridge for 24 hours so the tomatoes can drain properly while staying firm

- Take them out of the fridge just before you are ready to serve
- Discard all the liquid that has gathered in the bowl
- Give the wedges a gentle shake to get rid of any leftover bits of coarse salt

- Toss in the fresh basil leaves to your liking and serve immediately
