Ingredients
100 g of dehydrated desiccated coconut
120 ml of warm water
4 eggs
3 egg yolks
480 g of caster sugar
30 g of butter
120 ml of warm water
4 eggs
3 egg yolks
480 g of caster sugar
30 g of butter
Where to find ingredients
You can find desiccated coconut and quality butter at any major supermarket in the baking or dairy aisles. Ensure the eggs are fresh and look for caster sugar to achieve the best consistency.
Preparation method
- Mix the desiccated coconut with the warm water in a small bowl.
- Let the coconut stand for about 5 minutes until it is well hydrated.
- Place the hydrated coconut, eggs, egg yolks, sugar, and butter into a blender and blend just enough to combine.
- Grease a 1.5-litre microwave-safe dish with butter and sprinkle with sugar, then pour the mixture in.
- Cook in the microwave on medium power for 9 to 12 minutes until the quindão begins to set.
- Remove from the microwave, allow it to cool slightly, and carefully turn it out onto a serving plate.
- Wait for it to cool completely before serving to ensure the ideal texture.
Observations
The quindão is a larger and highly popular variation of the traditional quindim. This simplified version uses the microwave to ensure speed without sacrificing the distinctive flavour of coconut and eggs. Tip: use a microwave-safe mould to ensure even cooking.
