12 fresh sweetcorn cobs with husks, high quality
100 g of finely grated coconut
400 g of sugar
200 ml of water
12 fresh sweetcorn cobs with husks, high quality
100 g of finely grated coconut
400 g of sugar
Where to find ingredients
Look for fresh sweetcorn cobs in the vegetable section of your local supermarket or farmers' market, especially during the summer months. For grated coconut, check the international or tropical foods aisle, or visit specialist Asian or Caribbean stores. Fresh or frozen grated coconut can be used. Corn husks are often available in the same section as fresh corn or in the baking aisle. If unavailable, dried corn husks can be soaked in water to soften. For sugar, standard caster or granulated sugar is suitable. If you prefer a more traditional touch, some stores sell pre-packed 'pamonha' husks or similar wrapping materials in the ethnic foods section.
Preparation method
- Remove the kernels from the cobs by scraping or cutting close to the cob
- Blend the kernels with water until smooth
- Add the grated coconut and sugar to the mixture and stir well until combined
- Take a portion of the batter and wrap it in a corn husk, forming a tight cylinder
- Tie the ends with a piece of husk or kitchen twine
- Bring a large pot of water to a boil
- Carefully place the pamonhas into the boiling water one by one
- Ensure the water is boiling vigorously before adding to prevent them from falling apart
- Cook for about 40 minutes, using a slotted spoon to remove the pamonhas from the hot water
- Let the pamonhas cool in a cool place before serving
