Ingredients
1 pack pineapple-flavoured jelly
2 packs strawberry-flavoured jelly
480ml boiling water
480ml chilled Coca-Cola
400g light tinned cream (drained of excess liquid)
2 packs strawberry-flavoured jelly
480ml boiling water
480ml chilled Coca-Cola
400g light tinned cream (drained of excess liquid)
Where to find ingredients
You can find these ingredients in the baking or dessert aisle of major supermarkets such as Waitrose, Tesco, or Sainsbury's. Pineapple and strawberry jellies are standard items found in the jelly section. For the light tinned cream, look for 'double cream' alternatives or 'light cream' in the baking aisle. As a substitute for the Brazilian 'creme de leite' (light), you may use a standard whipping cream, though the texture may be slightly richer.
Preparation method
- Dissolve the pineapple jelly in 240ml of boiling water and set aside.
- Dissolve both packs of strawberry jelly together in the remaining 240ml of boiling water and set aside.
- Place the light cream, the prepared pineapple jelly, and the chilled Coca-Cola into a liquidiser.
- Blend all the ingredients thoroughly until the mixture is completely smooth.
- Pour the mixture into a mould (rinse it with cold water first to make turning it out easier) or into individual serving glasses.
- Place in the fridge for approximately 3 hours, or until the mousse has set firmly.
- Turn out of the mould carefully if necessary, and garnish to your preference before serving.
Observations
This Coca-Cola mousse is a surprisingly simple yet flavourful treat, ideal for those seeking a fuss-free dessert that still delivers on taste. By combining the distinctive notes of Coca-Cola with the sweetness of fruit jelly, the result is a light, airy texture that is bound to impress. It is a fantastic option for finishing off a meal or as a standout dessert at casual gatherings, as it can be prepared well in advance and served either in individual glasses or set in a mould to share.
