Ingredients
3 ripe plantains
1 cup water
3 tablespoons sugar
1 tablespoon butter
2 cloves
1 cup water
3 tablespoons sugar
1 tablespoon butter
2 cloves
Where to find ingredients
Look for ripe plantains, sugar, butter and cloves in the fruit and veg aisle, the baking section and the spice shelf of a local supermarket or greengrocer. If plantains are hard to find, a specialist tropical fruit shop is the best option.
Preparation method
- Combine the water, sugar, butter and cloves in a frying pan
- Peel the plantains
- Add the plantains to the frying pan
- Cover the frying pan
- Cook over a low heat
- Remove the lid as soon as the plantains are soft
- Increase the heat
- Let the plantains brown until they have a caramelised appearance on all sides
- Move the frying pan constantly to make sure they do not stick to the base
Observations
This dish gives you soft plantains coated in a glossy syrup. It is an excellent choice to serve alongside savoury dishes or as a quick dessert.
