Where to find ingredients
You can find raw peanuts (in shell) at most major grocery stores in the baking or snack aisle, often near other nuts. If you can't find them or prefer shelled peanuts, you can use 2 cups of shelled raw peanuts and adjust the roasting time slightly. Cocoa powder is readily available in the baking section of any supermarket. Brewed coffee is a pantry staple; use your favourite kind. Cinnamon and baking powder are also standard grocery items.
Preparation method
- In a saucepan, combine the sugar with the strong brewed coffee and heat over medium heat
- Stir continuously until the sugar dissolves and the syrup starts to thicken
- Add the raw peanuts in shell, cocoa powder, cinnamon, and baking powder to the saucepan
- Mix all ingredients well in the hot syrup until the mixture starts to dry out and pull away from the bottom of the pan
- As soon as it reaches a dry consistency, remove the pan from the heat
- Pour the peanut mixture onto a greased baking sheet
- Place in a preheated oven at a very low temperature (around 120°C or 250°F) for approximately 15 minutes
- While in the oven, stir the peanuts occasionally to prevent sticking to the baking sheet and ensure even drying
- Remove from the oven and let cool completely before serving or storing
