Ingredients
1 envelope (approx. 7g) unflavored gelatin powder
6 tablespoons cold water
1 can (300ml) sweetened condensed milk
1 can (300ml) whole milk (use the empty condensed milk can as a measure)
2 containers (approx. 175g each) plain yogurt
6 medium ripe red guavas
1/2 cup granulated sugar
1 1/2 cups water (for the sauce)
1/2 cup water (optional, for adjusting the sauce consistency)
6 tablespoons cold water
1 can (300ml) sweetened condensed milk
1 can (300ml) whole milk (use the empty condensed milk can as a measure)
2 containers (approx. 175g each) plain yogurt
6 medium ripe red guavas
1/2 cup granulated sugar
1 1/2 cups water (for the sauce)
1/2 cup water (optional, for adjusting the sauce consistency)
Where to find ingredients
You can find sweetened condensed milk and plain yogurt in the international or baking aisles of most Canadian grocery stores. Fresh red guavas are available in the produce section of ethnic grocers or specialized Latin American markets. If fresh guavas are unavailable, high-quality guava paste (goiabada) can be thinned with water as a substitute.
Preparation method
- Hydrate the gelatin powder in the 6 tablespoons of cold water.
- Dissolve the hydrated gelatin by placing the container in a warm water bath until completely liquid.
- In a blender, combine the sweetened condensed milk, milk, plain yogurt, and the dissolved gelatin, then pulse until smooth.
- Pour the mixture into a ring mold that has been lightly dampened with cold water.
- Refrigerate for approximately 4 hours, or until the flan is completely set and firm.
- While the flan sets, prepare the sauce: peel the guavas and dice them into cubes.
- In a saucepan, combine the diced guavas with the sugar and 1 1/2 cups of water.
- Simmer over low heat for about 20 minutes, or until the guava pieces are very soft and beginning to fall apart.
- Remove the pan from the heat and transfer the mixture to a blender. Blitz until you have a smooth, homogeneous puree.
- Return the guava puree to the saucepan and cook over low heat for another 15 minutes, stirring occasionally, until the sauce thickens.
- If the sauce becomes too thick during this final reduction, stir in the optional 1/2 cup of water to reach your desired consistency.
- Let the guava sauce cool down to room temperature before pouring it over the chilled flan to serve.
Observations
This yogurt flan with guava sauce is a traditional Brazilian treat, renowned for being light and cooling—an ideal way to wrap up any meal. The contrast between the velvety, smooth flan and the intense, fruity notes of the guava sauce is a crowd-pleaser.
