Ingredients
1 kg sweet cassava starch
2 cups sugar
300 g margarine
6 whole eggs
100 g grated coconut
2 cups sugar
300 g margarine
6 whole eggs
100 g grated coconut
Where to find ingredients
Sweet cassava starch may be found in Brazilian, Latin American or international grocery sections; tapioca starch can be used only as a labelled substitute if sweet cassava starch is unavailable. Sugar, margarine, eggs and grated coconut are common grocery store items.
Preparation method
- Place the sweet cassava starch, sugar, margarine, eggs and grated coconut in a large bowl
- Mix all the ingredients and knead with your hands until you have a smooth, even dough
- Grease a baking sheet with a thin layer of fat
- Make small balls with portions of the dough
- Spread the balls over the baking sheet, leaving a little space between them
- Bake in a preheated oven at medium temperature
- Let them bake until the cookies show a lightly golden colour
Observations
These cookies are well suited to an afternoon snack. The preparation is simple and makes a generous batch, with a distinctive texture that bakes up lightly golden and crisp.
