Where to find ingredients

Most ingredients can be found in local supermarkets or neighbourhood grocery shops across Barbados. Coconut milk, cornflour, and canned goods are readily available in the baking and pantry aisles.

Preparation method

  1. Blend the coconut milk, eggs, milk, oil, all-purpose flour, cornstarch, baking powder, and salt in a blender until the batter is smooth
  2. Set the batter aside
  3. In a separate bowl, mix the chopped onion, chopped olives, tomato sauce, 1 tablespoon of oregano, and salt to taste
  4. Set the filling aside
  5. Grease a rectangular baking dish (approximately 28 cm x 19 cm x 5 cm) with margarine and dust with all-purpose flour
  6. Pour half of the reserved batter into the prepared baking dish
  7. Distribute the chopped ham, chopped mozzarella, and the tomato sauce filling evenly over the batter
  8. Cover the filling with the remaining batter
  9. Sprinkle grated Parmesan cheese and oregano to taste over the top
  10. Place in a preheated oven at a medium temperature (180°C) and bake for approximately 45 minutes, or until the savory cake is golden brown and firm

Observations

Baked Bauru is a practical and comforting savoury traybake. This version replaces the traditional bread roll with a light, fluffy batter and a generous filling of ham and cheese, brought together by a rich tomato sauce. It is a fantastic option for a flavourful lunch, dinner, or a substantial snack that the whole family will enjoy.
