1/4 cup ricotta, crumbled
150g cream cheese
3/4 cup granulated sugar

2 tablespoons milk
500g pumpkin, peeled and cubed
1/4 cup ricotta, crumbled
150g cream cheese
3/4 cup granulated sugar
1 sachet unflavoured gelatine powder
1 tin cream, drained of excess liquid
Where to find ingredients
Digestive biscuits and butter are staples found in the baking aisle of any local supermarket. Ricotta and cream cheese are kept in the chilled dairy section. You can pick up fresh pumpkin at any local greengrocer or market stall. Unflavoured gelatine powder is usually kept in the baking aisle near the jelly and dessert powders. Tinned cream is widely available in the canned goods section; just ensure you drain any watery liquid before using it for the creamiest texture.
Preparation method
- Preheat your oven to 200°C
- Crush the biscuits until you have a fine crumb
- Combine the biscuit crumbs with the butter and milk, mixing until you have a damp, uniform base
- Press this mixture evenly into the base and up the sides of a 25cm pie tin
- Bake for 15 minutes and let it cool completely before you go any further
- Steam the pumpkin until it's lovely and soft, then mash it with a fork while still warm
- Whiz the ricotta, cream cheese, and sugar in a blender until you have a perfectly smooth cream
- Prepare the gelatine according to the instructions on the packet
- In a mixing bowl, gently fold together the mashed pumpkin, cream, the blended cheese mix, and the prepared gelatine until everything is nicely combined
- Spread the filling over your cooled base and pop it in the fridge until it's set firm and ready to tuck into
