Where to find ingredients
You can find standard baking supplies like flour, sugar, and butter at any local supermarket. For the authentic ingredients, look for goiabada and Queijo Minas in specialty Latin American grocers or select delis with a wide range of international cheeses. If you cannot find authentic Queijo Minas, a fresh, mild, semi-firm white cheese like a queso fresco works well as a substitute.
Preparation method
- Preheat your oven to 180°C.
- Grease your ramekins with butter and lightly dust with flour, tapping out the excess; set aside.
- In a mixing bowl, whisk the eggs and sugar together until the mixture is well combined.
- Fold in the grated Queijo Minas, ensuring it is thoroughly incorporated into the batter.
- Stir in the cream cheese and melted butter until the mixture is smooth and uniform.
- Gradually sift in the plain flour, gently folding it into the batter until you achieve a smooth, consistent texture.
- Spoon the batter into the prepared ramekins, filling each one slightly more than halfway.
- Place a cube of goiabada directly into the centre of each portion of batter.
- Top with the remaining batter, ensuring the ramekins are not filled right to the very brim.
- Bake in the preheated oven for approximately 5 minutes, until the edges are set but the centre remains soft and molten.
- Carefully remove from the oven, unmould while still warm and serve immediately.
- Serve as is, or optionally accompany with a small dollop of guava coulis or passionfruit pulp for extra tang.
