Ingredients
100 g dried shredded coconut
120 ml warm water
4 eggs
3 egg yolks
480 g sugar
30 g butter
120 ml warm water
4 eggs
3 egg yolks
480 g sugar
30 g butter
Where to find ingredients
You can find these ingredients at local supermarkets, typically in the baking aisles, the produce section for eggs and fresh items, or specialty grocery stores for coconut products.
Preparation method
- Mix the shredded coconut with the warm water in a small bowl
- Let the coconut rest for about 5 minutes until it is well hydrated
- Place the hydrated coconut, eggs, egg yolks, sugar and butter in a blender and pulse just enough to mix
- Grease a 1.5-litre microwave-safe refractory dish with butter and sprinkle with sugar, then pour in the mixture
- Place in the microwave on medium power for 9 to 12 minutes until the Quindão begins to set
- Remove from the microwave, let it cool slightly and carefully unmold onto a serving plate
- Wait for it to cool completely before serving to ensure the ideal texture
Observations
The Quindão is a larger and very popular variation of the traditional Quindim. This simplified version uses the microwave to ensure speed without losing the characteristic flavor of coconut and eggs. Tip: use a microwave-safe mold to ensure even cooking.
