Simple and Delicious Coca-Cola Mousse

Ingredients

1 packet pineapple jelly
2 packets strawberry jelly
2 cups boiling water
2 cups chilled Coca-Cola
1 tin light cream (drained of excess liquid)

Where to find ingredients

Pineapple and strawberry jelly packets are readily available in the baking or dessert aisles of most local supermarkets like Pick n Pay or OK. Coca-Cola is found in any beverage aisle. For the light cream, look for tinned 'table cream' or 'nestlé-style' cream in the long-life milk or tinned goods section; if you cannot find light versions, standard table cream works well as a substitute, though it will be richer.

Preparation method

  1. Prepare the pineapple jelly by dissolving it in 1 cup of boiling water and set it aside
  2. Prepare both packets of strawberry jelly by dissolving them together in 1 cup of boiling water and set aside
  3. Place the light cream, the dissolved pineapple jelly, and the chilled Coca-Cola into a blender
  4. Blitz all the ingredients well until you have a smooth, well-combined mixture
  5. Pour the mixture into a mould (rinse it with cold water first to make unmoulding easier) or into individual serving bowls
  6. Refrigerate for about 3 hours, or until it has set firmly
  7. Carefully unmould if using a large dish, or serve directly from your bowls, and garnish as you like before serving

Observations

This Coca-Cola mousse is an incredibly simple and surprisingly tasty treat, ideal for those who want a fuss-free dessert without compromising on flavour. It combines the classic fizz of Coca-Cola with the sweetness of jelly, resulting in a light, aerated texture that everyone enjoys. It’s a popular choice for rounding off meals or serving at parties and casual get-togethers, as it can be whipped up in advance and served in individual bowls or a larger dish for sharing.
