Where to find ingredients
You can find all ingredients, such as sweetened condensed milk, whole milk, and granulated sugar, at any local grocery store or supermarket in the baking or dairy aisles.
Preparation
- Place the sugar in a saucepan over low heat
- Stir with a spatula until it reaches a golden caramel color
- Carefully add 1/4 cup of boiling water to the caramel
- Be careful of steam and splattering
- Stir until the mixture is smooth and homogeneous
- Pour the caramel into an 18 cm ring cake pan
- Rotate the pan using a cloth to coat the bottom and sides
- Break the eggs individually into a small bowl and transfer to a larger container
- Use a wire whisk to gently mix the egg whites and yolks
- Add the sweetened condensed milk and incorporate well
- Pour the milk in gradually and stir gently to avoid creating air bubbles
- Let the mixture rest while you prepare the water bath
- Strain the flan batter directly into the caramelized pan
- Cover the pan with aluminum foil
- Fold the edges of the foil to secure it tightly
- Line the bottom of the pressure cooker with a folded kitchen towel
- Add 3 cups of hot water to the pressure cooker to create a water bath
- Place the flan pan inside the pressure cooker
- Close the lid and cook on low pressure for 10 minutes
- Carefully release the pressure from the cooker after the time is up
- Check if the surface of the flan is firm and carefully remove from the pot
- Remove the aluminum foil and let the dessert cool to room temperature
- Refrigerate for at least 3 hours before unmolding
- Gently heat the bottom of the pan on the stove for a few seconds to loosen the caramel
- Run a knife around the edges
- Place a deep plate over the pan and invert it in one quick motion
Notes
Preparing flan in a pressure cooker speeds up the cooking time, allowing the dessert to be ready quickly. The secret to a smooth, hole-free flan is to mix the ingredients gently without incorporating air and letting the batter rest before cooking.
