Where to find ingredients
Look for the ingredients at a supermarket or neighborhood grocer: potatoes and chicken in the fresh produce and meat sections, cheese and cream in the dairy aisle, and seasonings in the spices section.
Preparation method
- Cook the chicken breast in water with a pinch of salt until tender. Drain, shred and set aside
- In a pan, mix the shredded chicken with the tomato sauce and cook for a few minutes. Set aside
- Cook the potatoes in salted water until very soft
- Drain the potatoes and mash them while still hot with a potato masher or fork
- Add the butter, egg, grated nutmeg and salt to taste to the mashed potatoes
- Add the cornstarch little by little, mixing until you get a firm, pliable dough that can be rolled
- Shape small balls with the potato dough
- Cut the queijo minas into small cubes
- Fill each potato ball with a cube of queijo minas and, if you like, chopped black olives
- Seal the balls well so the filling does not escape during cooking
- Arrange the stuffed chicken balls in a baking dish, forming a circle
- Place the chicken with tomato sauce in the centre of the baking dish, between the balls
- Pour the cream over the balls and the chicken
- Sprinkle the grated Parmesan cheese on top
- Add oregano to taste
- Bake in a preheated oven at 180°C for about 20-30 minutes, or until golden and bubbling
