Ingredients
12 ears of corn with husks, fresh and clean
2 teaspoons salt
3 tablespoons grated Minas-style cheese or Parmesan
1/2 teaspoon sugar
1 cup whole milk
1 tablespoon margarine or butter
2 teaspoons salt
3 tablespoons grated Minas-style cheese or Parmesan
1/2 teaspoon sugar
1 cup whole milk
1 tablespoon margarine or butter
Where to find ingredients
Look for fresh corn in the produce section, and pick up cheese, milk, butter or margarine, sugar, and salt from the dairy and baking aisles. Fresh corn husks are best bought from a local market or farm stall; if needed, use the husks from the corn cobs themselves as the ideal option.
Preparation method
- Carefully remove the husks from the ears of corn, keeping some whole for assembling
- Cut the kernels off the ears with a sharp knife
- Place the kernels in a blender and blend until you get a well-processed mixture
- Add the milk to the corn cream and blend again until smooth
- Strain the mixture through a coarse sieve to remove fibres and get a smooth cream
- Transfer the sieved cream to a bowl and mix in the salt, sugar, and grated cheese
- Wash the reserved husks under running water
- Shape small packets with the husks, making individual portions
- Fill each packet with the corn cream, sealing the ends well and tying with kitchen twine
- Place the pamonhas in a pot of boiling water to cook
- Cook for about 10 minutes until set
- Remove the pamonhas from the water, drain, and serve warm or at room temperature
Observations
Savory pamonha is a Brazilian delicacy that brings together the sweetness of fresh corn and the special touch of cheese. This traditional recipe is practical to prepare and yields a creamy, flavorful portion that is ideal for sharing on any occasion. The key lies in choosing the husks carefully and processing the corn well, which helps create a smooth texture and an irresistible aroma of cooked corn.
