Coconut Milk Fish Stew (Peixe ao leite de coco)

Ingredients

1 kg shark (cação), a firm-fleshed fish with a mild flavor
1/2 cup olive oil or vegetable oil
Salt, black pepper, cilantro, and fresh herbs (cheiro verde) to taste
2 bottles of coconut milk, approximately 400 ml each
2 ripe tomatoes, peeled, seeded, and chopped
1 tablespoon cornstarch, dissolved in a little water
4 cloves of garlic, minced or crushed
1 lemon, juiced for seasoning

Where to find ingredients

You can find fresh fish at local fishmongers or supermarkets. Cilantro and fresh herbs (cheiro verde) are readily available at local produce markets. If shark is unavailable, firm-fleshed white fish fillets can be used as a substitute.

Preparation method

  1. Season the fish with the lemon juice, garlic, salt, and black pepper.
  2. Let it marinate in the refrigerator for 1 hour.
  3. In a pan, heat the olive oil and sauté the tomatoes until soft.
  4. Add the coconut milk to the pan and let it heat through.
  5. Place the fish in the pan and cook for about 15 minutes, until tender and coated by the sauce.
  6. Adjust the salt and pepper to taste.
  7. At the end of cooking, add the cilantro, fresh herbs, and the dissolved cornstarch.
  8. Mix well.
  9. Allow the sauce to thicken for a few minutes and turn off the heat.

The combination of fresh ingredients and a gentle cooking process results in a creamy sauce, perfect for serving alongside steamed white rice or other light side dishes.
