20 cherry tomatoes
1 can shredded tuna (preferably light)
1 teaspoon vegetable oil
1 clove garlic, chopped
Salt to taste
Freshly ground black pepper to taste
Where to find ingredients
Look for zucchini in the fresh produce section, canned tuna and rice in the pantry aisles, and tomatoes, garlic, oil, salt, and black pepper at any local supermarket or neighbourhood grocery. If needed, a plain vegetable oil can be used as a substitute for vegetable oil.
Preparation method
- Wash the zucchinis and cut them in half lengthwise
- Using a spoon, carefully scoop out the centre of each zucchini half, leaving space for the filling
- In a pan of boiling water, cook the zucchinis for about 1 minute
- Drain the zucchinis and set aside
- In a frying pan, heat the oil over medium heat and brown the chopped garlic
- Add the chopped zucchini flesh to the pan and sauté until tender
- Stir in the cooked rice, drained tuna, and cherry tomatoes cut into quarters
- Mix the filling ingredients well and season with salt and black pepper to taste
- Remove the frying pan from the heat
- Fill the cooked zucchini halves with the prepared filling
- Arrange the stuffed zucchinis in a baking tray
- Cover the tray with aluminium foil
- Bake in a preheated oven at medium temperature (about 180°C) for 30 minutes, or until the zucchinis are very tender
- Remove the aluminium foil and serve the stuffed zucchinis immediately
