Where to find ingredients
Find fresh sole and quality dry white wine at local seafood markets and liquor stores. For ingredients like butter and wheat flour, standard supermarkets are sufficient. If fresh thyme is unavailable, dried thyme is an acceptable substitute.
Preparation method
- Dredge the fish fillets in the wheat flour.
- Brown the fillets in a skillet using half of the butter.
- Transfer the fish to a preheated earthenware baking dish.
- Add a tablespoon of wheat flour to the remaining butter and let it toast slightly.
- Add the white wine, salt, black pepper, and thyme to taste.
- Cook for 3 minutes.
- Stir the sauce continuously during the cooking process.
- Pour the hot sauce over the sole fillets and serve.
