Creamy Homemade Shrimp (Camarão ao creme e)

Ingredients

2 kg large shrimp, shell-on (or 1 kg shelled)
Juice of 2 lemons
Salt to taste
5 garlic cloves, crushed
1 small tin extra virgin olive oil
2 medium onions, chopped
4 tomatoes, peeled, seeded, and chopped
1 ½ tablespoons annatto powder
520 g tomato sauce with parsley and basil flavor
2 tablespoons powdered beef seasoning
15 fresh basil leaves, chopped
200 g butter
250 g creamy requeijão
1 tin (approx. 300 ml) heavy cream
2 tablespoons cornflour
2 bunches fresh coriander, chopped
2 bunches spring onions, chopped

Where to find ingredients

You can find fresh seafood at local fishmongers or the seafood counters of major supermarkets like Woolworths or Checkers. Requeijão is a specific Brazilian soft cheese; if unavailable at international specialty shops, you may use a high-quality smooth cream cheese as a substitute, though the texture and salt profile will differ slightly. Annatto powder is often found in the spice aisle of well-stocked supermarkets or specialty spice shops.

Preparation method

  1. Clean the shrimp thoroughly and marinate in lemon juice and salt for about 20 minutes.
  2. Rinse the shrimp again and drain well.
  3. In a large pot, sauté the crushed garlic in the olive oil.
  4. Add the chopped onions, annatto powder, and diced tomatoes.
  5. Cook until the onions have softened.
  6. Incorporate the tomato sauce, beef seasoning, and chopped basil.
  7. Add the butter and the prepared shrimp to the pot.
  8. Cook over low heat for approximately 30 minutes, stirring occasionally.
  9. Stir in the creamy requeijão and cook for about 10 minutes, stirring until the sauce thickens.
  10. If necessary, dissolve the cornflour in a little of the liquid from the pot and add it back to the mixture, cooking for another 3 minutes.
  11. Stir in the chopped coriander and spring onions.
  12. Remove from heat and stir in the heavy cream.
  13. Mix gently until you achieve a uniform, creamy consistency.
