Where to find ingredients
For the prawns, look for fresh or frozen (thawed) peeled and deveined prawns at your local fishmonger or the seafood counter at major supermarkets. For the Brazilian-style 'queijo prato', a mild Gouda or a local semi-hard yellow cheese serves as a good alternative if you cannot find an imported version. 'Requeijão' is a unique, creamy spreadable cheese; in South Africa, you can often find a close equivalent in the deli section or use a high-quality cream cheese mixed with a splash of milk if necessary. Fresh herbs like parsley or spring onions can be found in the fresh produce aisle of any grocery store.
Preparation method
- Heat a splash of olive oil in a pan and sauté the crushed garlic until fragrant and golden
- Add the cleaned prawns to the pan and sauté until they turn pink and are just cooked through
- Stir in your preferred fresh and dried herbs, mixing well to allow the flavours to develop for a few minutes
- Season with salt, then mix in the mustard and tomato paste until thoroughly incorporated
- Layer the cheese slices over the prawns, taking care to stir gently so they don't catch on the bottom of the pan
- If the sauce is too thick, splash in a little boiling water bit by bit until you reach a silky, desired consistency
- Once the cheese has melted into the sauce, fold in the creamy processed cheese (requeijão) and cooking cream, stirring until smooth
- As soon as the sauce begins to bubble gently, take it off the heat
- Transfer to a serving dish and enjoy it while it is hot
