Where to find ingredients
Prawns: Look for medium-sized tiger prawns or queen prawns in the seafood aisle of your local Woolworths, Pick n Pay, or Checkers. They are often available ready-cooked and deveined in the frozen section. For the best flavour, buy fresh from a local fishmonger or the seafood counter at larger supermarkets. Lettuce: Any crisp garden or butter lettuce available in the fresh produce aisle works perfectly. Condiments: Mayonnaise, tomato sauce (ketchup), and Worcestershire sauce are staple items found in any local pantry or supermarket condiment aisle. Brandy: A standard South African brandy, available at any bottle store or licensed liquor retailer. Fresh cream: Found in the dairy fridge section at any grocery store.
Preparation method
- Wash the lettuce leaves thoroughly, dry them well, and shred them finely
- Bring a pot of water to a rolling boil
- Pop the prawns into the boiling water and cook for just a few minutes until they turn pink; drain and set aside to cool
- In a small mixing bowl, whisk together the mayonnaise, tomato sauce, Worcestershire sauce, brandy, and cream until smooth
- Chop most of the cooked prawns into bite-sized pieces, keeping a few whole to use for garnishing later
- Gently fold the chopped prawns into your sauce mixture until well coated
- Taste the sauce and season with salt and freshly cracked black pepper as preferred
- Grab individual serving glasses and place a layer of ice at the bottom of each to keep the dish cool
- Arrange a generous portion of the shredded lettuce on top of the ice
- Spoon a good amount of the prawn mixture over the bed of lettuce
- Garnish each glass with the reserved whole prawns
- Serve your prawn cocktail straight away while it’s perfectly chilled
