Where to find ingredients
Look for maize flour, cassava flour, tinned sardines, peas, tomato sauce, and olives in the dry goods, tinned fish, and sauces aisles at supermarkets or local groceries. Fresh tomatoes, parsley, and eggs are best bought from the produce section or a market stall; shrimp is usually available at the fish counter or a trusted fish market.
Preparation method
- In a saucepan, combine the chopped tomatoes, black olives, chopped hearts of palm, peas, tomato sauce and shrimp
- Cook over medium heat, adding water and salt to taste, until you have a thick, flavourful sauce
- In a separate bowl, mix the maize flour and cassava flour
- Gradually pour the hot sauce over the flours, stirring constantly, until you get a moist, even mixture
- Preheat a cuscuz steamer
- Spoon the mixture into the cuscuz steamer, shaping the cuscuz
- Arrange the hard-boiled eggs and tinned sardines on top
- Steam the cuscuz over low heat in a bain-marie for about 20 to 30 minutes, or until firm and cooked through
- Serve hot, garnished with the chopped spring onions and parsley
