Where to find ingredients
You can source fresh produce like tomatoes, onions, cucumbers, and herbs at local markets like Nakasero or Owino. Fine bulgur wheat is commonly available at specialized grocery stores or larger supermarket chains in Kampala that stock international grains and Middle Eastern ingredients.
Preparation method
- Place the dry bulgur wheat into a mixing bowl.
- Cover with water and let it soak for 2 hours until tender.
- Rinse the soaked bulgur thoroughly under running cold water.
- Drain the wheat completely using a fine-mesh sieve.
- Squeeze the bulgur firmly with your hands to remove any excess moisture.
- Rinse the chopped onions under cold water to mellow the flavor, then drain well.
- In a large bowl, combine the prepared bulgur, onion, and all other ingredients except for the tomatoes.
- Set the diced tomatoes aside to be added only at the very last moment.
- Cover the bowl tightly and refrigerate for at least 8 hours to allow the flavors to develop.
- Gently fold in the fresh diced tomatoes just before serving to maintain their texture.
Observations
Tabbouleh is a classic Middle Eastern staple that relies on the quality of its fresh ingredients. The texture of the bulgur, combined with the bright acidity of lemon and the abundance of aromatic herbs, creates a side dish that is both light and satisfying. Allowing the salad to rest in the refrigerator is crucial; it ensures the bulgur softens properly and the flavors meld into a harmonious blend.
