Olive oil to taste
Salt to taste
Where to find ingredients
You can find fresh zucchini, lemons, and coriander seeds at local markets like Nakasero or Owino, as well as in the produce sections of major supermarkets in Kampala. Olive oil is widely available in the oil and condiment aisles of grocery stores.
Preparation method
- Wash the zucchini skin thoroughly under running water using a vegetable brush
- Pat dry with a clean kitchen towel
- Trim off and discard the ends
- Cut the zucchini crosswise to separate the thicker end from the thinner tip
- Slice the thick part in half lengthwise and cut each half into three strips to create batons
- Cut the thin part in half crosswise so that all pieces are of a similar size
- Cut each of these pieces into four wedges
- Heat a non-stick frying pan over medium heat
- Add a drizzle of olive oil and place the zucchini pieces with the cut side facing down
- Grill for about 2 minutes until they are golden brown
- Lightly crush the coriander seeds in a mortar and pestle to release their aroma
- Flip the batons using tongs to brown the opposite side
- Add the crushed coriander seeds, season with salt, and drizzle with a little more olive oil
- Sauté for 1 more minute until the zucchini is tender and well-seasoned
- Finish by turning off the heat and incorporating the lemon juice
- Serve immediately
