You can find fresh pumpkins and local garlic at Kampala's vibrant markets like Nakasero or Owino. If abóbora de pescoço is unavailable, butternut squash is the best local substitute.
Preparation method
- Peel the pumpkin and cut the flesh into roughly 2 cm cubes.
- Finely mince the garlic cloves.
- Heat a large pot or frying pan over medium heat with the olive oil.
- Add the garlic and sauté for 1 minute just to scent the oil, being careful not to let it burn.
- Add the pumpkin cubes and salt to the pan.
- Stir the ingredients occasionally for 10 minutes, until the pumpkin begins to soften.
- Place the lid on the pan and reduce the heat to the lowest setting.
- Let it cook for 5 minutes so the pumpkin finishes softening in its own steam.
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon until you reach your preferred texture.
- Turn off the heat and serve immediately.
