Where to find ingredients
In Uganda, carrots, eggs, milk and butter are available in markets, supermarkets and grocery shops, while wheat flour, sugar, baking powder, cooking oil and chocolate powder are usually in the baking and pantry aisles. Use chocolate powder as the original ingredient; cocoa powder can be a substitute only if sweetened to taste.
Preparation method
- In a blender, blend the carrots, eggs and oil until smooth
- Add 2 cups of sugar to the mixture and blend for another five minutes to make sure the batter is very smooth
- Transfer the cream to a bowl
- Add the wheat flour gradually, mixing well
- Add the baking powder and mix gently with a spoon so the cake rises evenly
- Pour the batter into a greased and floured tin
- Bake in a preheated oven at 180°C for approximately 40 minutes, or until a skewer comes out clean
- While the cake bakes, prepare the topping in a saucepan
- Add the butter, chocolate powder, 1 cup of sugar and the milk
- Place over medium heat, stirring all the time, until creamy
- Remove the cake from the oven and pour the hot topping over it while it is still warm
- Let it cool a little before serving
Observations
This carrot cake is a much-loved classic across Brazil, known for its soft crumb and bright colour. Because the batter is made in a blender, it is practical for everyday baking or special occasions. The creamy chocolate topping balances the sweetness and texture of the cake beautifully, making it a very tempting dessert.
