Soft Orange Cake (Bolo de laranja)

Ingredients

2 cups wheat flour
2 cups sugar
1 cup orange juice (or good-quality orange soft drink)
4 eggs
1 teaspoon baking powder

Wheat flour, sugar, oranges or orange juice, eggs and baking powder are sold in Ugandan markets, supermarkets and grocery shops, especially in the baking aisle and fresh produce section. Orange soft drink is only the listed alternative when juice is not used.

Preparation method

  1. Start by beating the egg whites until stiff, then add the yolks and sugar, beating well until the mixture is smooth
  2. Fold the wheat flour and orange juice into the batter, mixing gently
  3. Finish by adding the baking powder and mixing only until incorporated
  4. Pour the batter into a previously greased and floured tin
  5. Bake in a preheated oven at 180°C for approximately 40 minutes, or until golden and firm
