Easy Homemade Light Mayonnaise (Maionese)

Ingredients

1 cup of cold milk
1 coffee cup of vegetable oil
1 tablespoon of white vinegar or lemon juice
1/2 packet of unflavoured gelatine

Where to find ingredients

Look for the ingredients in the chilled dairy section, baking aisle, and vinegar or citrus aisle of local supermarkets; unflavoured gelatin can also be found in the dessert or baking section. If needed, use clear unflavoured gelatine as a substitute for gelatina incolor.

Preparation method

  1. Prepare the unflavoured gelatine according to the package instructions and set aside
  2. Place the cold milk, oil and vinegar (or lemon juice) in the blender jar
  3. Add the reserved unflavoured gelatine to the blender
  4. Blend all the ingredients on high speed until smooth and creamy
  5. Transfer the mayonnaise to an airtight container
  6. Refrigerate for at least 10 minutes to set before serving

Observations

This homemade light mayonnaise is a lighter alternative to the traditional version, ideal for anyone looking for a gentler option without giving up flavour. Made with just a few ingredients and in very little time, it becomes a versatile companion for sandwiches, salads, and appetisers. The addition of unflavoured gelatine gives it a firm yet creamy texture, making it a great choice for special occasions or everyday meals.
