Traditional Oven-Roasted Beef Ribs (Costela assada)

Ingredients

2 whole beef rib racks
6 cloves garlic, crushed
Juice of 1/2 lime
Salt to taste
Beef stock (optional)

Where to find ingredients

Find the beef ribs at the butcher counter or in the meat section of the supermarket; garlic, lime, salt, and stock cubes or liquid stock are usually in the produce, seasoning, and pantry aisles.

Preparation method

  1. Season the rib racks with the crushed garlic, lime juice and salt
  2. Place the seasoned meat in a roasting pan
  3. Cover the roasting pan tightly with foil
  4. Bake in a preheated oven at medium heat (approximately 180°C) for 3 hours
  5. Remove the foil
  6. Continue baking longer, turning the meat occasionally and basting with the beef stock (if using) or with the pan juices, until well browned
  7. If the pan sauce dries out, add a little boiling water to keep it from sticking and to create more sauce

Observations

Oven-roasted beef ribs are a comforting, flavourful dish, ideal for family gatherings and celebrations. This recipe uses whole beef rib racks, roasted until they reach a melt-in-the-mouth texture with a golden, appetising crust. The preparation, although it takes time, is surprisingly simple, relying on basic seasonings that bring out the meat’s natural flavour.
