Ingredients

Where to find ingredients
Find fresh produce and pantry staples at any local grocery store or neighborhood market. Tahiti lime may be substituted with Persian lime if necessary.
Preparation method
- Peel the onion and chop it into very small pieces
- Pour the water into a kettle and bring to a simmer over low heat
- Heat a medium pot over low heat
- Add the olive oil and the chopped onion
- Season with a pinch of salt
- Sauté for about 2 minutes until the onion is softened
- Place the bay leaf and the rice in the pot
- Stir for approximately 1 minute so that the grains are coated in oil, which ensures a fluffy result
- Measure 2 cups of the boiling water and pour over the rice
- Season with the remaining salt and mix
- Increase the heat to medium
- Avoid stirring from this point on
- Wait for the water to dry until it reaches the level of the grains
- Reduce the heat, partially cover the pot
- Cook until all the water is absorbed
- Check the bottom of the pot with a fork to confirm that the water has dried completely
- Turn off the heat
- Add the lime zest
- Cover the pot completely
- Let the rice rest in the steam for 5 minutes
- Use a fork to fluff the grains and incorporate the zest
- Transfer to a bowl and serve immediately
