Black-eyed pea vinaigrette (Vinagrete de feijão fradinho)

Ingredients

1 cup black-eyed peas
4 cups water for boiling
1 medium red onion
1/2 yellow bell pepper
2 medium tomatoes
1/4 cup extra virgin olive oil
2 tablespoons white wine vinegar
Juice of 1 lemon
1/4 cup fresh cilantro leaves
Salt to taste
Freshly ground black pepper to taste

Where to find ingredients

Black-eyed peas and fresh produce are widely available at local farmers' markets and grocery stores. For white wine vinegar, any specialty pantry section will suffice. Fresh cilantro is easily found in the herb section.

Preparation method

  1. Place the black-eyed peas in a pressure cooker
  2. Add 4 cups of water
  3. Cover the pot and place it over high heat
  4. Once the pressure cooker begins to whistle, reduce the heat
  5. Cook for 10 minutes
  6. Dice the red onion into small cubes
  7. Remove the seeds from the yellow bell pepper and dice it into small cubes
  8. Cut the tomatoes in half, discard the seeds, and chop them into small cubes
  9. Wash and finely chop the fresh cilantro leaves
  10. In a large bowl, combine the chopped onion, bell pepper, and tomato
  11. Turn off the heat after the cooking time and wait for the pressure to release naturally before opening
  12. Drain the cooked beans in a colander
  13. Rinse the beans under cold water to stop the cooking process and drain well
  14. Add the cooked black-eyed peas to the bowl with the chopped vegetables
  15. Season with the olive oil, white wine vinegar, lemon juice, salt, and black pepper
  16. Mix all ingredients gently
  17. Serve the vinaigrette immediately, garnished with fresh cilantro leaves
