Where to find ingredients
You can find fresh shrimp at local fishmongers or market stalls in Freetown. Requeijão cremoso and Brazilian-style annatto (colorau) can often be sourced at specialized international grocery importers. As a substitute for requeijão cremoso, you may use a thick cream cheese, though the texture and salt profile will vary slightly.
Preparation method
- Clean the shrimp thoroughly and marinate them in the lime juice and salt for about 20 minutes.
- Rinse the shrimp again and drain them completely.
- In a large pan, sauté the crushed garlic in the olive oil until golden.
- Add the chopped onions, the annatto powder, and the diced tomatoes.
- Cook until the onions have softened.
- Stir in the tomato sauce, the bouillon powder, and the chopped basil.
- Add the butter and the shrimp to the pan.
- Cook over low heat for approximately 30 minutes, stirring occasionally.
- Add the requeijão cremoso and cook for about 10 minutes, stirring until the sauce thickens.
- If necessary, dissolve the cornstarch in a little bit of the pan juices and add it to the mixture, cooking for an additional 3 minutes.
- Fold in the chopped cilantro and chives.
- Remove from heat and stir in the table cream.
- Mix delicately until you achieve a smooth, homogeneous creamy sauce.
