Where to find ingredients
Find fresh white fish and produce at local markets or wet markets. Coconut milk, cashews, peanuts, and bread are available at any general grocery store. Dried shrimp and dende oil are specialty items often sourced from international food shops or vendors specializing in Afro-Brazilian ingredients.
Preparation method
- Soak the dried shrimp in water to remove excess salt.
- Toast the peanuts and remove any loose skins.
- Season the fish fillets with salt and black pepper and set aside.
- In a pan, heat half of the dende oil and sauté the onion, tomato, ground coriander, and bell pepper.
- Place the fish fillets on top of the sautéed base.
- Cook for approximately 5 minutes.
- Sprinkle with the red pepper flakes.
- Drizzle with the lime juice and the remaining dende oil.
- Cover the pan, set to medium heat, and cook until the fish is tender.
- Remove the fish from the sauce and flake into small pieces, reserving the sauce in the pan.
- In a blender or food processor, combine the drained dried shrimp, cashews, roasted peanuts, grated ginger, soaked bread, coconut milk, and water.
- Process until a smooth yet textured paste is formed; take care not to over-blend.
- Gently stir the blended paste into the reserved sauce in the pan.
- Simmer over low heat, stirring constantly, until the mixture thickens into the characteristic creamy consistency of vatapá.
- Fold in the reserved flaked fish.
- Adjust salt and pepper if necessary.
- Serve hot.
