8 large onions, sliced into thick rounds
Where to find ingredients
Beef and vegetables can be found at local wet markets or supermarket chains. Beef bouillon cubes are available in the spice or soup aisle of any local grocery store. For the meat, chuck or shoulder are recommended cuts for pressure cooking.
Preparation method
- Line the bottom of the pressure cooker with half of the onion slices
- Crumble 1 or 2 bouillon cubes over the onions
- Add the beef cubes on top of the onions
- Season the meat with the remaining bouillon cubes
- Cover the meat with the remaining onion slices
- Seal the pressure cooker and cook over medium heat for approximately 25 minutes after reaching pressure
- Turn off the heat and allow the pressure to release naturally
- If using potatoes, remove the top layer of onions, add the potato slices, re-seal the lid and cook for an additional 10 minutes after reaching pressure
- Let the pressure release naturally before opening the lid
Observations
Pressure cooker beef is a comforting and iconic staple in Brazilian home cooking. Its efficiency and ability to transform cuts into fork-tender, melt-in-the-mouth perfection make it ideal for quick midweek dinners. By relying on the intense pressure and simple ingredients, you achieve a deep, savory flavor that pairs beautifully with steamed white rice and a fresh salad.
