Ingredients
2 whole slabs of beef ribs
6 cloves of garlic, smashed
Juice of 1/2 lime
Salt to taste
Beef stock (optional)
6 cloves of garlic, smashed
Juice of 1/2 lime
Salt to taste
Beef stock (optional)
Where to find ingredients
Beef ribs (rib slabs/whole ribs) can be purchased at local wet markets or supermarket butcher counters; ask your butcher for 'beef ribs' suitable for slow-roasting. Garlic and limes are readily available in any local grocery store produce section. Beef stock can be found in the shelf-stable pantry section or the refrigerated aisle of supermarkets in Singapore.
Preparation method
- Rub the beef rib slabs thoroughly with the smashed garlic, lime juice, and salt
- Place the seasoned ribs into a large roasting tray
- Seal the roasting tray tightly with aluminium foil to trap the moisture
- Place in a preheated oven at medium heat (approximately 180°C) and slow-roast for 3 hours
- Carefully remove the aluminium foil
- Continue roasting to develop a deep, golden-brown crust, turning the ribs occasionally and basting with the beef stock (if using) or the pan juices
- If the pan juices evaporate too much, splash in a little boiling water to prevent sticking and to keep the gravy flavorful
Observations
Slow-roasted beef ribs are the definition of comfort food, making them an excellent choice for family gatherings or special Sunday lunches. This traditional Brazilian method involves slow-cooking whole cuts of beef ribs until the meat is incredibly tender and succulent. Although it requires a few hours in the oven, the preparation is incredibly straightforward, relying on simple, aromatic seasonings that let the natural, rich flavor of the beef shine through.
