2 beef steaks (sirloin, rump, or top round)
1 onion
2 tablespoons water
2 teaspoons white wine vinegar
1 teaspoon butter
Olive oil to taste
Salt to taste
Freshly ground black pepper to taste

Preparation method

  1. Let the steaks sit at room temperature for 10 minutes before starting the preparation.
  2. Prepare a mixture in a small bowl combining the water with the vinegar.
  3. Peel the onion and slice into half-moons approximately 0.5 cm thick.
  4. Heat a large skillet over medium heat.
  5. Season the steaks with salt and black pepper.
  6. Add 1 teaspoon of olive oil to the very hot skillet.
  7. Place the steaks side by side in the pan.
  8. Sear for 2 minutes until browned and they release from the surface.
  9. Flip the steaks using tongs.
  10. Sear the other side for another 2 minutes.

  12. Keep the skillet over medium heat and add another 1 teaspoon of olive oil.
  13. Sauté the onions with a pinch of salt for 2 minutes until they begin to brown.
  14. Pour the water and vinegar mixture into the skillet.
  15. Cook for 3 minutes, stirring occasionally to scrape the pan fond and soften the onions.
  16. Turn off the heat.
  17. Add the butter and swirl the skillet until melted and the sauce is emulsified.
  18. Serve the steaks topped with the onions and the pan sauce.
