Ingredients
400 g ground lean beef (patinho)
200 g green beans (approx. 20 pieces)
1/2 onion
1 garlic clove
2 tbsp olive oil
1 tbsp all-purpose flour
1 tsp sweet paprika
1/2 tsp cumin
1 cup water
salt and freshly ground black pepper to taste
200 g green beans (approx. 20 pieces)
1/2 onion
1 garlic clove
2 tbsp olive oil
1 tbsp all-purpose flour
1 tsp sweet paprika
1/2 tsp cumin
1 cup water
salt and freshly ground black pepper to taste
Where to find ingredients
Find lean ground beef at local butchers or supermarket meat sections. Fresh green beans are available in the produce aisles of wet markets or supermarkets. For substitutes, if 'patinho' (extra-lean round) is unavailable, use any high-quality lean ground beef.
Preparation method
- Take the beef out of the refrigerator shortly before starting so it reaches room temperature
- Bring the water to a simmer over low heat
- Wash the green beans thoroughly
- Trim the ends and cut them into 1.5 cm pieces using a diagonal cut
- Dice the onion into 1 cm pieces
- Peel and finely mince the garlic
- Heat a large pot or skillet over medium heat
- Add 1 tablespoon of olive oil and spread the meat in small portions across the pan
- Let the meat brown without stirring for 1 minute
- Season with salt, pepper, and sprinkle the flour over the meat
- Cook for 5 minutes, stirring occasionally so the pieces break apart and brown evenly
- Remove the browned meat to a bowl and set aside
- Keep the pan on the heat and add the remaining olive oil and the onion
- Add a pinch of salt and sauté the onion for 2 minutes until softened
- Add the green beans to the pan
- Season with salt and pepper and sauté for 2 minutes until lightly browned, keeping them crunchy
- Stir in the garlic, paprika, and cumin
- Sauté for another 1 minute until the spices become fragrant
- Pour in the hot water gradually while scraping the bottom of the pan with a spatula
- Return the browned ground beef to the pan
- Cook for another 2 minutes until the sauce thickens
- Serve immediately
Observations
This dish is a fantastic option for daily meals, balancing the protein of the beef with the crisp texture of the green beans. Follow the steps carefully to ensure the meat browns properly, which builds the base for a rich and flavorful pan sauce before adding the vegetables.
