Where to find ingredients
Find the ingredients at any supermarket in Singapore, especially the baking aisle for flour, sugar and butter, and the fresh produce section for apples; check the dried fruits section for raisins.
Preparation method
- Beat the butter with the sugar until smooth and creamy
- Add the egg yolk and one tablespoon of red wine to the mixture
- Gradually work in the flour
- Knead the dough until it is evenly combined
- Keep in mind that the dough will be more oily and sticky
- Divide the dough into two parts, one equal to 2/3 and the other to 1/3 of the total
- Let both portions rest in the refrigerator for 30 minutes
- Peel the apples and cut them into medium-sized slices
- Mix the sliced apples with the remaining tablespoon of wine and the raisins
- Steam the mixture until the apples are tender
- Line the bottom and sides of a springform pan with the larger portion of dough
- Spread the apple filling over the prepared base
- Use the smaller portion of dough to make thin strips
- Place these strips over the filling to create a lattice pattern
- Bake in a moderate oven until the top of the pie is golden
Observations
This traditional dessert combines a buttery pastry with a sweet-and-tart filling of apples and raisins. It is a lovely choice to serve with coffee or on special occasions.
