Easy walnut mousse (Mousse de nozes)

Ingredients

8 eggs
1 litre milk
300 grams ground walnuts
400 grams chocolate drink powder
2 cans condensed milk
3 boxes of 200 grams cream
1 packet unflavoured colourless gelatine dissolved according to instructions

Where to find ingredients

In Solomon Islands, eggs, milk, condensed milk, cream, gelatine and chocolate drink powder can be found in supermarkets and larger grocery stores. Walnuts are usually in imported baking sections; keep walnuts as the ideal ingredient for the original flavour.

Preparation method

  1. Separate the egg yolks from the whites
  2. In a still-cold saucepan, place the milk and the yolks passed through a sieve
  3. Add the chocolate drink powder and condensed milk
  4. Cook over medium heat for about 15 minutes, stirring continuously, until you get a thick cream
  5. Remove the pan from the heat
  6. Incorporate the ground walnuts and the cream
  7. Add the already dissolved colourless gelatine
  8. Gently fold in the beaten egg whites until you get a smooth mixture
  9. Transfer the mixture to a dish
  10. Place in the freezer for about 2 hours until it reaches a mousse consistency
  11. Monitor it to prevent the contents from freezing completely
  12. Decorate the surface with whole walnuts before serving
  13. Keep the dessert in the fridge after it has been served for the first time

Observations

This is a practical dessert for serving after a meal, rich from the walnuts and smooth from the cream and condensed milk. The key is folding in the beaten egg whites gently so the mousse stays light.

Chill it until set but keep watch so it does not freeze solid, then decorate with whole walnuts before serving.
