1 kilo crystal sugar

In Solomon Islands, fresh green coconuts, coconut water and sugar can be found at markets, roadside produce stalls and supermarkets. Cloves are usually sold in grocery shops or spice sections.
Preparation method
- Add the coconut water, crystal sugar and cloves to a heavy-based saucepan
- Mix the ingredients gently
- Place over the heat and wait for the syrup to start boiling
- Stir the grated coconut into the pan
- Keep cooking over high heat for about 20 minutes
- Stir the contents of the pan occasionally so it does not stick
- Turn off the heat as soon as the mixture becomes creamy
