Potato and Tuna Bake (Torta de batata com atum)

Ingredients

4 large potatoes, boiled and mashed
2 eggs
1/2 tbsp pure olive oil (for the dough)
2 tbsp olive oil (for the filling)
1 clove garlic, minced
1 medium onion, chopped
2 tomatoes, peeled, seeded, and chopped
1/2 bell pepper, thinly sliced
1 can flaked tuna
1 pinch salt
1 pinch black pepper
1 pinch oregano
1/2 cup water

Where to find ingredients

You can find fresh produce like potatoes, onions, and peppers at local markets or grocery stores in Koror. Canned tuna and olive oil are staples found in the pantry aisles of general supermarkets. If you cannot find fresh tomatoes, high-quality canned crushed tomatoes can serve as a suitable substitute.

Preparation method

  1. In a mixing bowl, combine the mashed potatoes, eggs, and 1/2 tablespoon of olive oil. Set aside.
  2. Heat 2 tablespoons of olive oil in a pan and sauté the minced garlic.
  3. Add the chopped onion and cook until translucent.
  4. Add the chopped tomatoes and sliced bell pepper. Season with salt, black pepper, and oregano.
  5. Pour in the 1/2 cup of water and cook for about 5 minutes, until the vegetables soften.
  6. Stir in the flaked tuna and cook for another 3 minutes, mixing well to achieve a consistent sauce.
  7. Spread the tuna sauce over the potato mixture in a baking dish.
  8. Place in a preheated oven at 180°C for approximately 15 minutes, or until lightly golden.
  9. Serve the bake warm, ideally accompanied by steamed rice and, if desired, a glass of chilled white wine.
