Where to find ingredients
Eggs, milk, walnuts, condensed milk, cream, chocolate drink powder and unflavoured gelatine are available in local markets and supermarket dairy, baking and dry-goods aisles.
Preparation method
- Separate the egg yolks from the whites
- In a cold pan, put the milk and the egg yolks passed through a sieve
- Add the chocolate drink powder and condensed milk
- Place over medium heat and cook for about 15 minutes, stirring continuously, until you get a thick cream
- Take the pan off the heat
- Fold in the ground walnuts and cream
- Add the dissolved colourless gelatine
- Gently mix in the beaten egg whites until the mixture is even
- Transfer the mixture to a serving dish
- Place in the freezer for about 2 hours until it reaches a mousse consistency
- Keep an eye on it so the contents do not freeze completely
- Decorate the top with whole walnuts before serving
- Keep the dessert in the fridge after it has first been served
Observations
A practical but elegant dessert for serving after meals. The key is folding in the beaten egg whites gently so the sweet keeps its light mousse texture.
