Fresh green coconuts and coconut water can be found at fruit markets, larger supermarkets and shops that sell imported or tropical produce. Cloves and granulated sugar are standard supermarket items.
Preparation method
- Add the coconut water, granulated sugar and cloves to a heavy-based pan
- Stir the ingredients gently
- Place over the heat and wait for the syrup to begin boiling
- Fold the grated coconut into the pan
- Keep cooking over high heat for about 20 minutes
- Stir the contents of the pan occasionally so it does not stick
- Turn off the heat as soon as the mixture becomes creamy
