Ingredients
1/2 cup strong brewed coffee
1 teaspoon ground cinnamon
1 teaspoon baking powder
3 cups sugar
500 g raw peanuts with skins
1 tablespoon cocoa powder
1 teaspoon ground cinnamon
1 teaspoon baking powder
3 cups sugar
500 g raw peanuts with skins
1 tablespoon cocoa powder
Where to find ingredients
In Pakistan, raw peanuts with skins, sugar, cinnamon, cocoa powder and baking powder are easy to find in supermarkets, dry-goods shops and local markets. Use brewed coffee made from ground or instant coffee according to what is available locally; it should be strong for the intended flavour.
Preparation method
- In a saucepan, combine the sugar with the strong brewed coffee and place over medium heat
- Stir continuously until the sugar dissolves and the syrup begins to thicken
- Add the raw peanuts with skins, cocoa powder, cinnamon and baking powder to the pan
- Mix all the ingredients well in the hot syrup until the mixture starts to dry and pull away from the bottom of the pan
- As soon as it reaches a dry stage, remove the pan from the heat
- Pour the peanut mixture onto a previously greased baking tray
- Place in a preheated very low oven, about 120°C, for approximately 15 minutes
- During the oven time, stir the peanuts occasionally so they do not stick to the tray and dry evenly
- Remove from the oven and let them cool completely before serving or storing
Observations
This sweet peanut crunch is a Brazilian-style snack with a deep coffee note, warm cinnamon and a crisp sugar coating. Made with a short list of ingredients, it is good with tea or coffee, or as a quick homemade treat. The method is straightforward: cook the syrup with the peanuts, then dry them gently in a low oven until crisp.
