100 g dehydrated shredded coconut
120 ml warm water
4 eggs
3 egg yolks
480 g sugar
30 g butter
120 ml warm water
4 eggs
3 egg yolks
480 g sugar
30 g butter
Where to find ingredients
You can find all these ingredients at local supermarkets, specifically in the baking and dairy aisles. Look for quality shredded coconut and fresh local eggs.
Preparation method
- Mix the shredded coconut with the warm water in a small bowl.
- Let the coconut sit for about 5 minutes until it is well hydrated.
- Place the hydrated coconut, eggs, egg yolks, sugar, and butter into a blender and pulse just enough to combine.
- Grease a 1.5 liter heat-resistant mold with butter and sprinkle with sugar, then pour the mixture in.
- Microwave on medium power for 9 to 12 minutes until the quindão starts to set.
- Remove from the microwave, let it cool slightly, and carefully unmold onto a serving dish.
- Wait until it has cooled completely before serving to ensure the ideal texture.
Observations
The quindão is a larger, very popular variation of the traditional quindim. This simplified version uses the microwave to ensure speed without losing the characteristic flavor of coconut and eggs. Tip: use a microwave-safe mold to ensure even cooking.
