Ingredients
1 kg neck pumpkin (or butternut squash)
2 cloves garlic
2 tablespoons olive oil
1 teaspoon salt
2 cloves garlic
2 tablespoons olive oil
1 teaspoon salt
Where to find ingredients
Pumpkin can be found in the produce section of most supermarkets. Neck pumpkin is common in Brazil, but butternut squash is a readily available substitute in many parts of the world. Garlic and olive oil are standard pantry staples. Salt is also widely available.
Preparation method
- Peel the pumpkin and cut the flesh into 2 cm cubes
- Finely chop the garlic cloves
- Heat a large pot or skillet over medium heat with the olive oil
- Add the garlic and sauté for 1 minute, just to infuse the oil, being careful not to burn
- Add the pumpkin cubes and salt to the pot
- Stir occasionally for 10 minutes, until the pumpkin begins to soften
- Cover the pot and reduce the heat to low
- Let it cook for 5 minutes so the pumpkin finishes softening in its own steam
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon, until you reach your desired texture
- Turn off the heat and serve immediately
Observations
With a slightly rustic texture, this purée is a practical and healthy alternative to diversify everyday meals.
