Where to find ingredients
Look for escarole in the leafy greens section of supermarkets or wet markets, and buy roasted unsalted peanuts, garlic, chili powder or cayenne, and olive oil from the pantry aisle. If escarole is unavailable, curly endive can be used as a substitute.
Preparation method
- Separate the escarole leaves and wash them carefully under running water
- Dry the leaves with a salad spinner to make sure they are completely dry
- Layer about 5 leaves, roll them into a cylinder, and slice into strips about 3 cm wide
- Press the garlic cloves with the flat side of a knife to peel them, keeping them whole to flavor the oil
- Heat a large nonstick skillet over medium heat
- Add a little olive oil, the peanuts, the cayenne pepper, and a pinch of salt
- Sauté the peanuts for about 3 minutes until lightly golden
- Remove the peanuts from the skillet and set aside in a bowl
- In the same skillet, still over medium heat, add 1 1/2 tsp olive oil and one garlic clove
- Sauté the garlic for 1 minute, just until the oil is fragrant
- Add half of the escarole, season with a pinch of salt, and sauté for 2 minutes
- Stir occasionally until the leaves are lightly toasted and still crisp, making sure they do not release excess water
- Remove the first batch of escarole and repeat the same process with the remaining leaves
- Transfer the sautéed escarole to a serving platter and finish by sprinkling the spicy peanuts on top before serving
